This is Aaron’s all-time favorite breakfast item, except for almond butter pancakes. I think it’s because it’s the closest thing he gets to cereal. It keeps you full for hours and is chock full of nutrients!
2 cups white quinoa
4 cups dairy free milk of choice (we use almond or coconut)
¼ cup frozen or fresh blueberries
2 Tbsp maple syrup, honey or agave
1 tsp cinnamon
Handful of cacao nibs
1 tbsp chia seeds
Extra dairy free milk
1. Bring the milk and quinoa to a boil. Lower the temperature and let simmer until the milk is absorbed. About 15 minutes.
2. Fill a bowl with quinoa and top with items of your choice!
