If you’re like me and you HATE cooking, you’re really going to hate it in an RV. Cook space, storage and water are all extremely limited, so you have to be creative. Thankfully for you, I’ve learned a few tips and tricks that help. Now, don’t be expecting any gourmet meals, go out to eat for that!
I don’t really bake, sorry, but, if you like simple, healthy, easy and fast, check out these recipes. Many of our recipes are vegan, and all are gluten, sugar and dairy free. Enjoy!
Drain your pasta/potatoes out the window to save some tank space. It won’t hurt the environment because, well, it’s just plain water.
One pan meals are your best friend. Cherish these.
Keep only the kitchen tools you really need, and invest in ones that fit your space. I use 5 pans (wok, large fry pan, small fry pan, large sauce pan and small sauce pan), an InstantPot, blender, juicer, food processor, 2 baking dishes, 2 glass mixing bowls, 2 plastic mixing bowls, 1 small strainer, 1 large cutting board, and 1 small cutting board. That’s it! Some women’s heads are spinning right now.
I know it’s not environmentally friendly (boo!), but paper plates really help cut down on dishes. Please don’t judge me, I do care about trees.
Re-use dishes and utensils you use to mix things. Think twice before grabbing a new fork. I use the same bowl and fork that I mix up the guacamole in to eat the taco bowl with. Wah-lah!
Shop the bulk aisle and get only what you need for that week so you don’t take up a ton of storage space for something you may not use for another month or so.
Buy in bulk from Costco the things you use daily. This saves so much money and ensures I don’t have to buy some things every stinking week. For me, that’s quinoa, chia seeds, coconut aminos, apple cider vinegar, apples (10lb bag, holla!) and coconut oil.
Here are some of my favorite, RV friendly recipes:
